According to the X-Winder 2 axis tutorial: https://youtu.be/czCtrogZ3sw?t=295 it says we can make variable thicknesses on our mandrel (apparently I can't post two images in one post, so just click the link with the timestamp)
However i don't see this option in the Designer software? (see screenshot)

yes, the video you reference states, "layers can be staggered to produce varaible wall thickness". To do this requires manual modification of the G-Code file. Create a g-code file of your part, the send to xfo and we can show you how.
